This morning at work a co-worker who happens to live in the same town I do asked if I'd seen the 40+ eagles that were soaring over the Mississippi on my way to work. I don't go that way, I go down the back hill instead of down along the river (DARN!!) so I didn't see them. But I went by there on my way home and only saw a couple of eagles sitting in a tree. I wish I had seen that. Co-worker said she almost drove off the road watching them. I wonder if eagles flock together to head north or where ever it is they spend the summer months? I always thought they were pretty much loners. Of course they can't always be loners or the species would die out.
We went to the new Wallyworld yesterday. It wasn't too crowded in the morning when we went and that was surprising since it was their first day to be open. Of course, I heard later in the day they were swamped! I ran into a few of my friends while we were there. One of them was my old obedience school instructor. He gave me a big hug, it's been such a long time since I saw him. I told him I no longer had my dalmatian (the one who went thru numerous classes of his and the dog I showed in fun matches with him) but that I had a little Chihuahua that was not very well socialized.

I told him I should probably bring her to class. He's still running obedience classes, I pass his school everyday in my school bus. I may take Rosie this summer. She is so afraid of strangers and that's not a good thing. But it is a good thing too...she barks like a loon when someone comes in our yard. It makes me feel safer at night. We call her our Chihuahua doorbell. Anyway, he told me that he's had Chihuahua's that were as old as 4 years old that have come to class and turned into proper gentlemen and ladies. Rosie is 2 1/2 yrs old. I just might do it!!
We've been having the best veggie with our supper meals. The recipe comes from my friend Sis's blog and it's delish!!
I may have changed the recipe a bit, but this works for us and here's how we do it.
Roasted Roma Tomatoes
6 Roma tomatoes cut in half lengthwise and the seeds scooped out
pinch sea salt
1/2 C. grated Parmesan cheese
1/4 tsp. oregano
1/4 tsp. basil
1/4 tsp. rosemary
1/4 tsp. black pepper
Olive oil
Pre-heat the oven to 400°. Lay the tomato halves out on a cookie sheet. Sprinkle with sea salt (the tomatoes, not the cookie sheet). In a bowl mix together the Parm, and spices. Spoon the mixture equally into the tomatoes. Spritz or drizzle olive oil over the tomatoes and roast in the oven until the cheese is beginning to brown. These make a great side dish or even a main course. They taste sort of like pizza and are very diet friendly! Yum!

ReplyDeleteDon't even worry about changing any recipe of mine - I don't claim to have made up very many of them at all, and recipes are made to be tweaked - you gotta make em like you like em - your combo sounds delish!
