Lime? Count me in!

Ever since I can remember, I've loved lime. It seems like it's more popular than ever these days...I mean they make Lime Diet Pepsi (I have one every morning...it's my coffee), Lime Diet Coke, lime is used so much in Mexican food, the food network is always squeezing lime over something...there is lime powder, reconstituted lime, Rose's lime, lime Kool-Aid, lime scented lotion, body spray, conditioner for your hair, perfume oil, candles, air fresheners...



...there are even songs about lime...this was one of my first ever songs I downloaded from iTunes! I was listening to it as I typed this.



Lime is EVERYWHERE!

This is all fine with me...My name is Ginni and I'm a Lime-aholic and if I was from England, I'd be proud to be called a "Limey"!!!

When my friend Sis posted a recipe for Coconut Pound Cake with Lime Glaze, that SHE invented, on her cooking blog The Cast Iron Kitchen... you know that I just had to try it! I have one in the oven right now. I can't wait to taste it!

My friendly sis Marsha, not to be confused with my friend Sis...the inventor of this cake recipe...beat me to it...making the cake that is. Here's a pic of her with her lovely cake. We didn't cut hers because she wanted to keep it whole so her hubby could see it when he got home from work yesterday. At least that's what she told me. I think she was just too nice to say "I know you're a lime-aholic and will just be crumbs left if I let you cut into it!" It really turned out nice looking tho and when I told her I was doing a blog post on lime she let me take a pic of her cake.



I put this post on hold for a while so I could show you my cake... Here's my effort.



Now you can tell I have a huge lime jones and sweet tooth to boot. I made twice as much glaze as Marsha...I'm with Sis's family...I love lots of glaze! The more lime the better! I considered making a big pot of glaze and just dipping my piece of cake into the glaze so it would all be covered with it! But I thought that was a bit decadent, so I gave up that idea. Oh and just for the record, that's not ALL glaze around the base of the cake...that's toasted coconut. I made a little bed of it around the cake. It worked good to cover the drips of glaze and the uneven spaces under the cake.

Now about the taste of Sis's recipe...It was amazing! This cake is a winner. I had it with a big mug of ice-cold milk, upon Sis's recommendation. Oh YUM! Marsha and her husband loved it, Andy and I loved it so much!! I think Sis should write a cookbook. She seems to be able to do it all...she's a very entertaining writer, a superb photog, and can she cook!! And when you can invent great recipes like this, you owe it to the world to write a cookbook! Come on Sis...You can do it!

Well, I'm going to go put some nice lime lotion on, tuck into bed and have some nice lime dreams with the scent of lime in the air and the memory of lime glaze on coconut cake fresh in my mind.

  2. Aw, Ginni, this started my day off with a HUGE smile! And your cake is gorgeous!

    Please tell me anything you think will improve it. For instance, did you have to trim any off the top so it would sit nicely on a cake plate? What did you think of the texture? As far as I know, you and Nikki are the only 2 who've made it besides me and I really want your input, both positive and negative!

    Thanks for making my day (and the cake, lol). And for the giggle about dunking your piece in lime glaze!

  3. Anne, isn't it divine! I love the subtle coconut flavor with the lime glaze!

    Sis, the only ones I know so far that have made it are Anne, my sister Marsha and I. Deb is talking about making it with limes from HER lime tree (oooo, I'm so jealous!...what I wouldn't give to have a lime tree!) and I'm sure there will be others. And once they try it, they'll let you know! I didn't cut the top down so it would sit nice...I just piled coconut all around the cake (that isn't all glaze at the base of the cake...LOL) and YES, I love the texture and "poundcakeness of it! Now you get going and get busy on that cookbook!

    Cookbook? Two pages is all it would have, this cake and the lemon-mango scones I made up. ROFL! But you're so sweet to say that. :)

  6. Sis, I made YOUR mango salsa and YOUR baked tomatoes and probably many more of YOUR recipes! Well, at least to me they were yours! LOL Yes, my sister Marsha is very pretty.

  8. The cake looks wonderful, I love lime also! The recipe would be great. I make Lime Cilantro soy candles, they smell wonderful. If you want one let me know, I will mail one off to you.
