Well, this photo was taken after I made breakfast. We had chili rellenos! I took 8 of the largest Anaheim peppers and made a slice in one side of each pepper...pulled out the seeds and as much of the "veins" as I could get out. If there's any heat in a pepper, that's where most of it is concentrated. I stuffed some cheddar cheese in half of them and some hot pepper cheese in the rest. I was making these in hopes of convincing Andy to try them. I promised him that these peppers aren't too hot and spicy and that he could handle them with no problem. I used the cheddar in half so they would be mellower. After stuffing them all with cheese, I dipped them in egg and rolled them in flour. Then I fried them in a large frying pan with canola oil in it. Even tho he's not crazy about cooked pepper of any kind, and he's NOT a heat-eater like I am, Andy was his usual brave self and he said he'd try them. I think they looked good enough to him and he's getting more and more adventurous, the more I have my hooks into him...bwahahahaha!

I have to give him his props!! He ate 4 of them and really liked them!! Another little victory in my quest to broaden Andy's gustational horizons!! Twenty-two years in the Navy doesn't do much for the palate!
Oh Ginni, they look SO good!
ReplyDeleteI love love love chili rellanos.
xoxoxo
Your opening a whole new world for Andy's taste buds. I'm guessing Scotch Bonnets are out of the question.
ReplyDeleteP.S. - Hi Rosie love!
ReplyDeleteI don't like chili renos, but those look so yummy. Good for Andy for giving them a shot.
ReplyDeleteNow I want mexican food for lunch...
Ginni, your peppers are such beauties! I love both Anaheim and jalapeƱos :-)
ReplyDeleteJoan, I do too...YUMMMMM...but I forgot to make sauce for them...they were sort of a spur of the moment thing and we just ate them like you see them. I think next time I'll make more of a batter too. It's been so long since I made them, I sort of forgot how! LOL
ReplyDeleteBrad, no Scotch Bonnets (I call the habaneros) for Andy. I had a co-worker give me a big bag of those and I put them in the freezer. Last time I made chili, I slit one opened and just dropped it in the leftover chili. (Andy won't eat leftovers much) and that was the best chili!! I love the flavor of a habanero so much, but the heat is a bit much, even for me! Oh, and Rosie said "woof, yip" I think that's "Hi Brad and Bear" in Chihuahua!
Fiwa, that's one reason I made them...my Mexican food jones was really acting up!!
Anne, I love them both too. Mine never get very hot tho. I don't know why...even my jalapenos are never hot enough for me!
I'm not a heat eater either, and you can't blame it on the Navy. Ha ha. Never had chili rellenos. In fact, I wasn't even sure what they were till I read your post.
ReplyDeleteLOL!!! Well, 23 years in the Marines doesn't do much for the palate either...ha ha ha
ReplyDeleteMy Lovee is strickly a meat and potato kinda guy. Boring!!! He's beginning to broaden his horizons but as you probably know...it's slow going!
Your eggs look fabulous!!!!!! Love em!!!
