Well, I made the mango salsa from Sis's recipe. Sis of Rain Down on Me fame. And I'm here to say it rocked the Casbah! And it went great with Andy's idea of a grilled pork loin, too.
I've always loved pork with fried apples, grilled pineapple or some other sweet side dish and the mangoes in this mango salsa were just sweet enough to fill the bill very nicely. Don't get me wrong, mango salsa isn't overly sweet...but it's sweet, savory, salty and tangy all at once. Wow, what a party in your mouth it creates! The only other ingredient I added besides the ones Sis mentioned were a couple of green onions from my garden. They have gotten a bit bigger than earlier green onions usually are, so I used some of the green and made rings out of the white part of the onion. I also added the red onion that Sis mentioned. I was a bit afraid it was going to be too much onion so I just used half a smaller red onion. I was blown away by the flavor and I was so pleased that Andy loved it too. He's gotten so adventuresome in the past few weeks that I'm always shocked when he eats and likes something out of his usual realm of dining. I had to laugh, the moment I started peeling and chopping the mangoes, Rosie, our little Chihuahua started begging for a bite. She loves bananas, apples, lettuce and some other fruit. After "gnawing" off most of the leftover goodies on one of the seeds, Andy took her and that seed and let her have it outside. She just licked and licked! I think she is as hooked as we are!!
Here's the recipe I used in making the salsa...
3 ripe mangoes, peeled and chopped (the pits were all "gnawed" as prescribed...Rosie dawg loved hers!)
6 Roma tomatoes, chopped
1/2 a small red onion, chopped
2 green onions, sliced thinly using some of the green
1 small bunch of cilantro, chopped
1 lime, squeezed over the entire thing
sea salt, a few grinds over the entire thing
Stir and mix well...let sit for a couple hours

Movie
I mentioned in my previous post that we were going to the movie. I had dutifully checked the movie times and went by what they had online as times. When we got there, we found out that "The Love Guru", the movie Andy wanted to see, was only on at 9 pm, NOT 12:30 pm, as the online schedule for this movie theater said. So we opted to see "Hancock" instead. It wasn't bad, but not up to the usual par for a Will Smith movie. It was kind of a super-hero movie, but the super-hero Will Smith played was a drunk derelict! Oh well, we had wanted to see that one anyway, but I think Andy was a little disappointed not to get to see the other one.
New Deck Furniture
We spent some time shopping for some new deck furniture before and after the movie yesterday. Since gas prices have gone over the roof, we always try to incorporate errands into one trip to save gas. Lowe's is right beside the movie theater, so we went a little early and looked at table, chairs, umbrella, umbrella stand, rug for under the table, chair cushions. I have a pic of one of the chairs and a bit of the table. I'll post more photos of the stuff when I get time to take them. We moved all the old stuff down to the grill patio that Andy just finished. It's old but still pretty functional so we didn't want to throw it out. Lowe's had most of the stuff we bought on sale, so we saved a bit of $$. We already had the candles, I love that they matched without giving them a thought when we got the new stuff.
