Mango Fandango

Mangoes!

I was inspired by a post on Sis's blog about mangoes!

When I was in Jamaica on vacation in 2001, with my sister Marsha...we went to visit Mayfield Falls, I had THE best mango ever in the whole world.

Anyway at the end of our tour (which was fabulous, by the way...if you ever find yourself in Nergril, Jamaica, you have to go there!) we got in our cab and as we left there was a little tiny Jamaican girl standing on the edge of the road selling mangoes. I told the cab driver to stop and I bought a couple. We were hungry and thirsty from being in the Jamaican heat. Those mangoes were THE best mango I've ever had!! It may have been the heat and my thrist or the fact that I bought them from an adorable little girl or maybe it was because they were freshly picked and grown right there. Who knows, but I just remember that mango being juicy, luscious, perfectly ripe and talk about "gnawing on the seed"!! Whoa, I hated to put it down!

I'm off to the grocery store to get the ingredients for the mango salsa Sis mentioned in her blog. It just sounds too good to pass up. When I told Andy what I wanted to make, he said he thought a grilled pork loin would be great with the salsa! I love that man.

Mango Salsa ala Sis

Chopped mango
Chopped tomato
Chopped red onion
Chopped cilantro
Juice from one lime
Sea salt

I'll let you know how it turns out.

Movies

Andy and I are going to see The Love Guru! I already saw it once, but it was funny enough to see again! I really want Andy to see it. It's such "guy humor"!! This movie thing is fun...they have "senior" prices all day Wednesday so we get a great deal. We can both see a movie, get popcorn and pop and all under $20!

Walking

I'm on my way out to walk. Marsha made a suggestion that since I really want to start exercising that I make a plan to do something exercisy every day of the month. With July just starting, I decided to do it! I exercised twice yesterday, I walked outdoors and then last night I walked on my treadmill for a while, while I watched Deadliest Catch. I hope I can keep my commitment...I really need to do this!!

  1. I'm looking forward to seeing your results, Gin! I thought about making some of that salsa for some grilled fish...

    Just a warning - I liked it, but the juice of the lime was pretty strong - you might want to start with 1/2 and then taste it an hour or so later -

  4. Mmmmm... don't you love food memories like that? Jamaica is where we'll be having our incentive trip this year - I can't wait! Jerk chicken here I come!
