A Wonderful Summer Salad

A dear friend of mine from the strawberry capital of the world ...Ponchatoula, La.... gave me a great recipe a couple days ago. I tried it yesterday and it was great! It has a lot of my favorite things in it. You have to try it, it’s really simple.

Dressing:

1 cup olive oil
3/4 cup balsamic vinegar
3/4 cup of sugar or Splenda
1 tsp. salt
1/4 tsp. paprika
1/4 tsp. white pepper

Shake well before pouring...keep refrigerated

Salad:

loose leaf lettuce
sliced strawberries
walnuts
crumbled bleu cheese

The tartness of the balsamic vinegar sets off the sweetness of the strawberries so well. I used Splenda instead of sugar and that made it very diety. The walnuts add a great crunch and that bleu cheese! Oh my, it’s my favorite thing!! I used fresh lettuce and spinach from my garden, so that made this salad extra good. It couldn’t have been fresher. I picked it and came in right away and washed and drained it and made my salad. Yummmmy!

  1. It looks beautiful. I wonder if it could be made with another cheese besides blue. (Another of my allergies. drat.) Or I could use the blue for Michael and just leave it off for myself.

  3. Ruth, I am going to try feta too. My sister doesn't like bleu cheese (gasp!) and I know she will love this salad minus the bleu!

    Sis, you will love it. And with strawberries in season right now, this is the time!! It is so YUM!

  4. Gin I don't want to rain on your parade, but forget the splenda - a CUP of olive oil is like 5000 calories!! LOL LOL

  5. LOL Jackie!! I know ...that's why I made only 1/3 of this recipe...and just drizzled a little, enough for a taste on my salad. I don't use much dressing anyway. Olive oil is very heart-healthy and good for you. But you're right...calorie-wise, oil is oil! I think this would be just as good if you cut only the oil down to 1/3 or 1/4 cup...most of the flavor comes from the balsamic vinegar anyway. :)

  6. mmmmm balsamic vinegar...

    yeah that's what I do too. I really like Good Seasons Italian with balsamic, but sometimes it's just a little too - I don't know - acidic? And I really like creamy Italian, so I started making this. I use lowfat plain yogurt and add a BUNCH of montreal steak seasoning and then maybe 2-3 tablespoons of already made Good Seasons (so it does have some oil). This is for the whole big tub of yogurt. It's delish. I use it on salads, baked potatoes. yum!
